So we don’t really have to push this one on you, do we? It’s sugar. Sweet, sweet joy. These little crystals are made by boiling then dehydrating the sap of the coconut palm so although it has the same amount of carbs and cals as table sugar, it packs quite a few benefits too. First of all, coconut palm sugar contains trace amounts of vitamin C, phosphorus, potassium, magnesium, zinc, calcium, iron and copper. Hey, if you’re going to eat all that sugar you might as well get some nutrition with it, are we right or are we right?
Coconut palm sugar also has a low glycemic impact of just 35 (compared to the 60-75 range for boring old sugar). What this means is that it has a less dramatic effect on your blood sugar than other types of sweeteners. So you won’t have a sugar high followed by a crash that leaves you feeling tired or experiencing cravings.
Yeah, we know this is pretty obvious but it’s worth noting that you can use coconut sugar like you would table sugar. You can bake with it, stir it in your coffee, or use a spoonful to help the medicine go down!
